Yes, l double the recipe and instead of 2 cups of brown sugar I use one and a half cups of brown sugar. I also cut the butter by one quarter cup instead of two sticks. I use one and a half sticks. They come out perfect with these modifications.

If they fall apart it was probably because you overworked the dough or it was too warm. The filling may have been runny or you overfilled the cookies. I have made them many times and this recipe is wonderful.

Very good overall, but with even 80% of the quantity of red enchilada sauce in the recipe is tasted like there was a little too much of that. I also used double the amount of recommended cheese and think it was not too much. The total volume of ingredients I used produced 22 enchiladas. Next time I will try this with about 2/3 of the recommended amount of red enchilada sauce, white onions instead of yellow onions. and still use the double cheese quantity.

This was very good, but too soupy. Next time I’ll either omit the mayo or use less soup. I made half a recipe and used only 1 can of soup, and it was still too soupy, so I’ll use even less next time. I also thought it needed more chicken and broccoli, so I added more. The best part in addition to tasting good, this recipe is so easy to make! I even assembled it ahead of time and put it in the fridge and took it out to bake at dinner time. I cooked it a little longer since it was cold from the fridge.

I’ve heard about this “apple pie moonshine” thing for years and know people who make it but I had never made it myself and didn’t have a recipe.
a few weeks ago I decided to use a quart of my Dad’s moonshine we had stashed away for at least 6 yrs. I don’t drink and my husband rarely does.
So I found this recipe, sized it up, adjusted for the amount of moonshine we had and went for it.
I did make a change where the sugar was concerned. I used 1.5 cups of white sugar and 1.5 cups of brown sugar.
I simmered the mixture for an hour after bringing it to a boil as instructed.
I let it sit overnight to cool. I added the pie mix to the moonshine so as not to overdo the mixture. My husband was the taste tester and gave the thumbs up when I had the perfect blend of pie mix to moonshine.
My Dad’s brew is 80 proof, so there was no waiting to try it or serve it.
He said “wow..this is really good!”
So we took it to a friend’s house for a small gathering the following day! What a hit…both couples loved it and we’re quite impressed.
Even though I don’t drink i did keep a pint jar of the virgin variety for me. and it is really good!
