How to pound the chicken breast thin and even for crispy chicken?

Baked meat served on a black plate with tomatoes.

When you pound chicken, you will want to start in the middle and work your way to the edges. Use the flat end of your meat mallet and go until it’s even in thickness. If it’s even in thickness, the chicken will be evenly crispy. Or buy a thin-sliced chicken breast to save time. These chicken cutlets instead of the hand pounded are usually more expensive. The key is you want the chicken even.
